Any kind of chocolate can be used for dipping strawberries. It depends on which taste you like best. You can use dark, white, or milk chocolate. Some people prefer semisweet or bittersweet chocolate in chip form because it is easier to melt. Others add shortening or butter to the chocolate to encourage smoother melting and better solidifying during cooling.
For a beautiful, shiny finished product, you should use good quality chocolate such as couverture. But you must be cautious because this contains 32% cocoa butter and is quite tricky to work with. You may want to start by practicing with a small quantity at a time until you get it right.
