What is white chocolate?

White chocolate is ivory colored and has a sweet dairy taste. It is comprised of cocoa butter, butterfat, sugar, milk solids, lecithin and flavorings. It doesn't have cocoa liquor; therefore it is not true chocolate.

Be careful when melting white chocolate; it is very sensitive to heat. It is also very difficult to work with because it contains such a small amount of cocoa solids.
