What is the difference between bittersweet and semisweet chocolate?

Technically there is no difference between these two kinds of chocolate, because the US FDA requires both to have at least 35% chocolate liquor. However, once manufacturers meet this requisite, they may add extra chocolate liquor, sugar, milk solids, lecithin, cocoa butter, vanilla, or other flavorings to smooth out the flavor.
Bittersweet chocolate typically has a substantial amount of cocoa solids in it but less sugar, providing a rich and strong chocolate flavor. Check the label; the finest bittersweet chocolates have at least 50% cocoa solids.
Semisweet chocolate is a classic dark chocolate. Its pleasing sweetness makes it an all-time favorite of home bakers. It can be melted or made into chunks for any recipe requiring chocolate.
You can easily find these chocolates in almost any grocery store because chocolate producers in both Europe and America manufacture them in bulk.
