Dutch-processed cocoa is also known as 'alkalized' cocoa powder. It has been treated with alkali during processing to neutralize its acids and produce a milder flavor. Also, since it is non-acidic it does not react with baking soda as other types of chocolate do.
Dutch cocoa can be easily dissolved in liquids. It is great in cakes and other pastries because of its subtle flavor that balances well with the other ingredients. Some well-known brands of Dutch cocoa include: Lindt, Poulian, Droste, Valrhona and Pernigotti.
