What can I do when my chocolate hardens while melting?

Melting chocolate is a very delicate operation. When chocolate turns thick and hardens during the melting process, this is called seizing. Seizing occurs for one or both of the following reasons:
- The heat is too high. Keep the heat low and keep stirring while melting chocolate. Don't try to hurry the process.
- Moisture has got into the chocolate. Chocolate is very sensitive, particularly with liquids. Be sure to wipe your spoons and other utensils thoroughly before using.
For urgent situations like this, you can mix in 1 tablespoon of solid vegetable shortening for every 6 ounces of chocolate (equivalent to 1 cup of baking chips) while melting your chocolate. This should loosen it up again. However, the chocolate will no longer be considered pure, so you will not be able to use it for tempering. But don't throw it out; you can still use it in baking or sauce.
